Senior Capstone
Hype and myths are everywhere in the field of nutrition, and this assignment for my Senior Seminar Class was to select one of these myths or a fad diet and present the research feeding all the hype and the research that goes against the hype. This had to be a professional presentation that would be given in front of peers as well as other professors involved in the Dietetics program. Genetically modified organisms was what my partner and I chose, which ended up being a good decision. This project taught me a lot about the economic side of food as well as the science and nutrition behind GMOs, opening me up to viewpoints that I had never considered. For instance, I had never considered that GMOs could be used to distribute vaccines to foreign countries. Most importantly, this assignment taught me how to balance an argument and come up with research for both sides of every argument.

Pregnancy Diet Template
For my Nutrition Through the Life Cycle: Pregnancy and Adolescence, we were asked to create a diet for a hypothetically pregnant woman, giving her exact instructions of what foods to eat and when. This was the hardest project I have done through my college career to date but it was also the most useful. Learning just how much really goes into creating a diet for someone as sensitive as a pregnant woman, while still keeping in mind that they are human and enjoy things like flavor and meal times. The instructions are in the document itself with the menu I designed to meet this particular woman's needs.

Micronutrient Research Paper and Presentation
We all have our introduction to nutrition courses where we learn, in general, what each micronutrient and macronutrient do in the body, but our Advanced Nutrition course went in depth about the biochemistry behind each vitamin and mineral. For this assignment, we were to research a given micronutrient and write a research paper on it as well as give a scientific presentation. The paper and presentation could only be based around scholarly articles and scientific journals. I learned the most about research and how to go about finding legitimate quantitative studies. The extensive biochemistry involved in the assignment itself was also informative and helped explain a lot in terms of magnesium's role on a cellular level as well as what it does to help maintain the body's homeostasis.

Term Project: Diet Analysis
For my Nutrition Assessment and Counseling class, our major assignment for the semester was to analyze a 3-day food diary of a friend or relative. I used my roommate as my "client". We used NDSR and SuperTracker to analyze the nutrient content of all the food our client ate and wrote extensively on how to improve upon their diet. Weighing out the pros and cons of each software made it clear that both have their applications. This huge project showed me how to use nutrient analysis software, which was a lot more precise and extensive than I had predicted. It gave us hands on experience with looking at the nutrient intake of someone using software, then putting that in terms that the client could understand, showing us the whole process that one must go through to analyze the diet of a client. Ultimately this project gave me confidence to take someone's intake and give them tips to improve upon it while in a professional setting.
